Madura Seva is a traditional sweet fried snack from Kerala made from chickpea flour (besan) and water, shaped like noodles, and often enjoyed with tea. It is known for its simple ingredients, crispy texture, and connection to childhood memories. The dough is extruded through a mold with different attachments, similar to an idiyappam press, into oil for frying, and can be enjoyed plain or coated with a sugar syrup.
